Chocolate Lava Cake

Ingredients
• 12 tablespoons unsalted butter
• 8 oz dark chocolate or semi-sweet chocolate
• 1 cup granulated sugar
• 3 tablespoons cornstarch
• 4 large eggs
• 4 large egg yolks
• Vanilla ice cream (for serving)
• Fresh berries (optional, for garnish)
Instructions
1. Melt the chocolate and butter:
- In a medium saucepan, melt the butter over medium heat.
- Add the chocolate and whisk until fully combined and smooth. Remove from heat and let cool slightly.
2. Prepare the batter:
- In a large mixing bowl, whisk together the sugar and cornstarch.
- Gradually pour in the melted chocolate mixture, stirring until well combined.
- Add the eggs and egg yolks, mixing until the batter is smooth and uniform.
- Cover and refrigerate the batter overnight for the best results.
3. Preheat the oven:
- Preheat your oven to 375°F (190°C).
4. Prepare the ramekins:
- Line four souffle tins or ceramic ramekins with parchment paper and grease them thoroughly with butter or cooking spray.
5. Bake the cakes:
- Divide the batter evenly among the prepared ramekins.
- Bake for 28–30 minutes, or until the edges are set but the centers are still slightly soft.
6. Serve:
- Let the cakes cool for a few minutes before turning them over and unmolding them onto plates.
- Garnish with fresh berries, if desired, and serve with a scoop of vanilla ice cream.
